1️⃣ The big picture: Every year, British cheesemakers generate 95,000 tonnes of salty whey, a byproduct left over after cheese curds are separated and salted. Because of its high salt content, this form of whey is generally considered waste and difficult to dispose of without environmental consequences. Researchers at Heriot-Watt University in Edinburgh, working alongside space tech company Take Root Bio, have now developed a bio-based process that converts the sugars in salty whey into bioethanol. That fuel has real-world applications, including heating homes and powering vehicles. While bioethanol is not a new concept, this approach tackles a specific and previously hard-to-manage waste stream in the dairy industry.

2️⃣ Why is this good news: Turning a problematic waste product into usable fuel means cheese producers gain a practical outlet for material they currently struggle to manage. Converting 95,000 tonnes of salty whey into bioethanol each year could meaningfully reduce the environmental burden that dairy waste places on waterways and soil. Beyond the dairy sector, finding new feedstocks for biofuel production helps diversify the range of sources we can tap for low-carbon energy. Giving waste streams economic value also creates financial incentives for industries to invest in cleaner, more circular production models.
