Contrary to common assumptions, these plant-based defaults often save money while significantly reducing environmental impact through lower emissions and decreased land and water use.

Eleven NYC hospitals reported cost savings of approximately 59 cents per meal, totaling $450,000 in 2023. These initiatives enjoy high approval ratings, with 90% of participants expressing satisfaction in multiple studies. The approach is particularly effective because it works with human behavior rather than against it, making sustainable choices the path of least resistance. Plant-based defaults also improve accessibility for the 50 million US adults who have difficulty digesting lactose in dairy milk.
